Sometimes recipes work, sometimes they fail, and sometimes you can use leftovers to make a better meal.
I made pierogie lasagna the other day. We ate every single bite, well at least Dinosaur and I did. Hubby just couldn’t handle that it wasn’t traditional lasagna, he is VERY picky, but I love him. I didn’t use all the frozen pierogies, I decided to try some with eggs the next morning and it was a SUCCESS!
Ingredients:
frozen pierogies
spice mix
eggs
Directions:
heat up pierogies in iron cast skillet on stove top
add scrambled eggs and spice mix
Dinosaur ate EVERY bite of his…with ketchup it was a heavenly breakfast.

Normally I make pancakes with fruit INSIDE of them, but this time I decided to try fruit on the outside in the shape of a smiley face. Dino was NOT having this at all, he refused to eat any of the fruit. He clearly explained that it is supposed to be inside his pancake. He at least ate some of the pancakes and politely asked for cheerios. I smiled and gladly fulfilled his request, knowing I should have NEVER deviated from my usual pancakes.

I took the left over pancakes and decided to try the same trick with the eggs. Dinosaur LOVED this too. Anything with eggs seems to be a MUST for Dino. I bet with fruit inside, it would be even better.

I did NOT learn my lesson from the smiley face pancakes, and attempted to make chicken and fruit kabobs. Since it was a last minute recipe I made it up as I went along

~At the time, I was hoping it would come out good~
Ingredients:
chicken breasts
olive oil
seasoning mix
squash
Directions:
Pour lots of olive oil into cast iron skillet
add a good amount of spice mix
Add chicken breasts and brush on spice mix and olive oil mixture onto to both sides
Add squash around the chicken, cover and bake at 250 degrees for about 45 minutes.
I then cut the chicken, strawberries, and grapes. I carefully added the pieces on the kabob sticks and presented them to Dinosaur. He was impressed with the design, but only ate the chicken. Did I really expect anything? So silly mommy. But I have another idea for the chicken and fruit and will post about it next Tuesday.

I quickly gave made a peanut butter and jam sandwich, he ate almost all of it.

I’ve tried many recipes that didn’t quite work out for one reason or another. My motto…try, try, again! I’m visiting from SITS…have a good one!
yes, cooking should be fun…and who knows maybe in a few months he’ll love those pancakes and kabobs.
Oh yes, many, many failures here, too! I am always better off just sticking to the basics that I know my children will eat!
I try to experiment, but then kick myself when I know he is not going to eat it, LOL
Hmmm…. failures include anything with vegetables, the color green, and more than one texture per bite. Oh, and anything with grill marks. I cook for a tough crowd.

Kids are funny, eating isn’t just about taste and smell, looks matter. The Doctor always said put one thing they will, one thing they might and one thing they probably won’t eat on a plate. They’ll have a meal and be exposed to new foods. I liked that idea.
yeah, I heard that too and mostly do that…but I love to experiment, but you’d think I’d learn my lesson by now. LOL
Great to hear Dinosaur ate it all. My challenge is always will the kids eat it? Thankfully, my 8 y.o. is developing a more discerning palate and trying different things.

I can’t believe your little guy didn’t eat the pancakes with the fruit on top! That’s hilarious – mine wouldn’t eat it if the fruit was in! lol
I always try to make different things and it’s really that the kids won’t try ANYTHING new. I made lettuce wraps which were soooo amazing. My daughter liked them, but my son absolutely refused to touch it. It does get better when they get older. They even use that as an excuse, “I’ll like it when I’m older Mom”!
i’m hoping as he gets older he’ll eat more types of food, Though he LOVES guacamole and hummus, but HATES avocados and chick peas…strange little guy.
It’s funny to see what he does and does not approve of. Mine are kind of the opposite in whatever factor makes it so they’ll like a meal or even try it. Fruit on the inside of a pancake would be an absolute abomination to them… mixing foods in general doesn’t work for them… perhaps it’s an ocd thing.
funny how each child is different in what they like and don’t like. a total mix of foods is heaven for him, he LOVES a guacamole, hummus, salsa and soy cheese mixture
Sorry the husband didn’t like the pierogi lasagna — I never thought of mixing eggs and pierogis — definitely going to have to try that!
hubby is very picky, worse than Dino.
