SLOW COOKER: Beef Stew with Sweet Potatoes and Quinoa

  • add beef tips for stew
  • half cup water
  • frozen peas and corn (meant  to add string beans, but it was in the freezer in the garage and I couldn’t get it at 5am)
  • cut then frozen gold potatoes and sweet potatoes
  • seasoning of your choice ( I used Goya seasoning and McCormick steak mixture)
  • cook on low for seven – eight hours
  • cook quinoa and brown rice mix according to the directions
  • add the quinoa and brown rice mix to the stew

I LOVED IT…another great meal for the fall. I was the only one though. It’s healthy, tasty, and perfect for the fall.

Dino wanted none of it and Hubby said because of the sweet potatoes he didn’t want it.

  1. Haha! It looks good, but I’m with the hubby on this one. I don’t like sweet potatoes either. They have an overpowering taste that will infiltrate and take over.

    I’m wondering if you can make this one with regular potatoes? What do you think?

  2. I didn’t even think to use sweet potatoes either, but have a feeling Kevin would have the same reaction as your husband and not want to eat it. I don’t think I could eat this all by myself though, so unless he would actually eat not sure it would be worth making just for me. But definitely have to make beef stew, because Kevin does love having this once the weather cools down. So pretty sure this one is my future soon!! 🙂

  3. Make it again and I will be over! I love me some sweet potatoes. Yum. Of course, reading this reminded me I totally walked out of the house and forgot to put our dinner in the crock pot. LOL. Haven’t stopped “by” in awhile… but I’ve been thinking about you!
