On Sunday, Hubby brought home the ingredients for pigs in blankets and Dino chomped on a peanut butter and jelly sandwich. It was an off day. Guess we’ll save the burgers for another night. Sorry no pic for that night.
Monday was a snow day…what a storm we had! We stuck to our original plan and had tuna melt with avocado, Dino and Hubby loved it…Hubby even had a second sandwich.
We switched our meals, since we had another snow day on Wednesday. I decided it was a perfect day for beef stew. I still have two bowls left over, which means more freezer meals-freezer meals are a great way to save money, right?
Thursday I made rice and beans. I used Knorr Fiesta Rice mix…it smelled so good and tasted even better. I sauteed the black beans and zucchini in the cast iron skillet, then mixed it with the rice, then topped it with taco shreds. Dino ate it all, zucchini included. With the leftovers, I made and froze three rice and bean burritos…will make a great meal one night.
Saturday Hubby decided to make the cheeseburgers instead of me cooking the noodles and meatballs. I was nervous Dino would not eat it, since he HATES burgers and I was prepared to make french toast for him. Low and behold he ate half a cheeseburger!!! I was in shock…so much so that I forgot to take pics of the plate of yummy burgers.
