LEFTOVER Chicken Soup: Whole Chicken, sweet potatoes, celery, carrots, onions, barley,

Of course Dino MUST have the red bowl…and he ate every bite. I swear the sweet potatoes make all the difference.
FROZEN LEFTOVER Slower Cooker Rice and Beans:
Recipe can be found here. We made it into a nachos with lots of cheese
- 1 box pasta
- ground beef
- pasta sauce
- shredded mozzarella cheese
- seasoning of choice
- Cook ground beef in cast iron skillet until all pink is gone, cook ground beef with LOTS of seasoning and a bit of water and olive oil, then mix in some sauce, at the same time boil pasta, when past and beef is done, layer half past in pan, layer ground beef and sauce mixture, then layer on cheese, repeat one more time but add more sauce before adding final cheese on top. Cover and bake at 350 for ten minutes
Chicken Thighs with Sweet Potatoes:
- boneless chicken
- sweet potatoes
- olive oil, coconut oil
- seasoning of your choice
- brown sugar
- marinate chicken with seasoning (I used bbq seasoning), olive oil and water. Then lightly coat in flour and place in cast iron skillet and bake at 350 degrees until cooked. Slice sweet potato and coat in coconut oil, place in cast iron skillet, bake at 350 for thirty minutes. Sprinkle brown sugar over potatoes after cooked.
Dino got the stomach bug and was eating rice, bananas, toast, and pretzels for days. He happily ate the chicken and potatoes. He said he really liked this chicken…I guess it’s more dark meat for this guy.
LEFTOVERS – Chicken Thighs, Potatoes, and Chicken Soup:
Dino asked for broccoli to go with his chicken and potatoes. I happily cooked some broccoli, cauliflowers, and carrots in a cast iron skillet and a tablespoon of coconut oil.
Even though I push fruits and vegetables, we still crave snacks. Thankfully there are many companies that produce NON-GMO snacks, since I am an awful baker. Some of my new favorites are…..
Liz Lovely’s cookies. Our favorite is Triple Chocolate Mint…but each is so delicious and GMO FREE.
Coco Roons. Our favorites are vanilla maple and lemon pie. They are GMO Free as well.
In an effort to save money and do a better, but EASY job of planning meals I’m just typing it out and putting it on the fridge. I WILL use, must use freezer meals in this meal plan. I don’t want them to sit and not get used…what was the point of gathering up the leftovers and freezing them. Hubby will know what’s on the menu and I won’t have to open up anything or search for the plan…it’s right there.

Receipt Hog, I take pictures of receipts and get points. It’s that simple. It was recommended by a few reputable sites, I am at 600 ponits and can get a $5 Amazon card when I get to a 1000 points. It’s like getting money for free…we shall see if it really works. I will keep you updated.
