Slow Cooker Roasted Chicken

Say what? Roasted chicken in a slow cooker? No way! YES  WAY! Other recipes called for putting a roasting rack in your slow cooker, I didn’t have one. Then I found THIS recipe from Family Fresh MealsAll I had to do was put 4 tin foil balls on the bottom of the slow cooker and put my chicken on top.  SUPER EASY

The first thing I did was remove the chicken from its original bag, put in in my own freezer bag with olive oil, water, and seasoning of choice. Make sure you get seasoning in the chicken too. Then I popped it in the freezer. Days later when I decided to make it, I took it out of the freezer…the seasoning marinated into the chicken as it defrosted.

Ingredients:

~ organic whole chicken
~ organic potatoes
~ organic carrots
~ organic couscous
~ organic butter and olive oil (amount depends on preference)
~ organic coconut oil (amount depends on preference)
~ organic Italian seasoning (amount depends on preference)

Directions Chicken:

1. place four tin foil balls on bottom of slow cooker, pour 1/2 cup water in, and place chicken on top. (Rub on extra seasoning if you choose)
2. Turn on slow cooker to high for six hours
3. When chicken is done,, place in pan or cast iron skillet carefully, and broil for ten minutes on each side to make sure skin is crispy.

Directions Veggies and Couscous:

1. Cut potatoes and veggies, coat generously in oils and seasoning, place in oven and bake for ten minutes at 350 degrees.
2. Then broil veggies for another 10/15 minutes to preference. Make sure to turn over and mix veggies so both sides get equally broiled.
3. Boil couscous according to directions, add butter, olive oil and seasoning for flavor.  (I buy it from the bulk section at Whole Foods and only get what I need for the week).

What a tasty and flavorful meal! So easy or a weekend, then you have leftovers for the week.

Ingredients:

~ organic potatoes (cut into strips)
~ organic veggie mix of your choice
~ organic ground beef mixed with cheese and bacon
~ organic Italian seasoning
~ organic buns and ketchup

Directions:

1. mix veggies and potatoes (separately) in olive oil and seasoning
2. Place potatoes and veggies in separate pans and bake at 350 for 20 minutes, then switch to boil to properly crisp them dry the oil. Instead of them being soggy they will be tasty and crispy!
3. grill the burgers to your liking. I prefer mine medium, while Tony prefers medium well.

AJ ate the smaller version of the burger, normally he HATES burgers. I explained that these smaller burgers are just for kids. It’s like eating a meatball in a sandwich. He believed every word and ate it up! (UPDATE) we tried to feed him a small burger this past weekend, and it was no-go. Him eating one was just a fluke! 

The roasted veggies and fries were PERFECTION!

Tilapia Fillets, Stuffed Potatoes, and Butternut Squash

Ingredients:

~ tilapia fillets
~ potatoes
~ frozen butternut squash
~ butter
~ bacon
~ olive oil
~ seasonings of choice
~ leeks, onions, garlic

Directions Tilapia:

1. marinate in baggie with olive oil, water, and seasoning
2. Place on cast iron skillet when ready and sprinkle with some flour to give it that “fried” look
3. bake at 350 until fully cooked

 

Directions Potatoes:

1. place in clast iron skillet and cover, bake at 350 until full cooked
2. carefully cut in half when cooled, scoop out insides
3. mix scooped out potatoes with butter, milk, cheese, leeks, garlic, pre-cooked bacon, and seasoning of choice
4. scoop mixture back into each potato and cook for another five minutes

Directions Squash:

1. marinate with olive oil and coconut oil
2. cover with honey and cinnamon
3. bake at 350 until outsides are crispy….

There were no leftovers…

Tilapia Quesadilla For Dino

Ingredients:

~ tilapia fillets cooked and cut into small pieces
~ 2 whole wheat tortilla
~ cheese
~ seasoning

 

Directions Quesadilla:

1. latyer toritalla on cast iron skillet
2. layer cheese, seasoning, and shredded tilapia
3. add more cheese and cover with second tortilla
4. cook fully on both sides with crispy

Pea and Ham Soup

Ingredients:

~ ham bone with some meat still on it
~ dried peas
~ carrots
~ potatoes
~ leeks, onions, garlic,
~ couscous
~ seasoning of choice

Directions:

1. add water to bowl with seasoning of choice
2. place bone in pot
3. Then top with herbs and peas
4. Set at a boil, then simmer for one hour
5. Remove bone and cut off all meat and marrow and place back in soup
6. add couscous and veggies and simmer for another hour
7. Let cool and serve

Dino hasn’t had this as of yet…may have to freeze in smaller bags and serve last minute dinners…I LOVED IT THOUGH

We used rubber bands to decorate our eggs…Yes we used plant and herb based dyes for our eggs! They came out pretty darn cool! Then Dino drew on them.

The Easter bunny did give him some chocolate, but it was organic NON-GMO mint truffles..he LOVES anything with mint. He also got money, markers, glo sticks, a key chain and LOTS of Legos. Of course all his grandparents got him Easter gifts too, but we can’t list everything!

Meatballs and Spaghetti

Ingredients:

~ ground beef and turkey
~ seasoning of choice
~ garlic and onion
~ sauce
~ spaghetti
~ bread crumbs
~ egg
~ small bowl of olive oil

 

Directions meatloaf:

1. chop up garlic, onion, cauliflower
2. mix with egg, breadcrumbs, and ground beef and turkey
3. use olive oil to keep meat mixture from sticking to your hands
4. roll into balls and place on cast iron skillet
5. ****save some mixture and mold into small meatloaf****
6. bake at 350 for about 30-40 minutes or until cooked

 

Serve with spaghetti and sauce! 

Bake potatoes and broccoli with seasoning and serve with meatloaf

~ potatoes
~ cheese
~ eggs
~ spices 

Directions:

1. slice potatoes and bake in oven until fully cooked
2. pour raw scrambled eggs on top of baked potatoes (I mix my eggs with water and seasoning)
3. cover and bake until eggs are fully cooked
4. remove from oven and sprinkle shredded cheese on top

 

Makes for a great and filling snack

Meatball and Spinach Pizza

Ingredients:

~ ground pork and turkey
~ spinach
~ whole wheat pizza bread
~ sauce and shredded cheese
~ seasonings of choice
~ olive oil

Directions:

1. cook ground pork and turkey with seasonings
2. Set aside frozen fresh spinach
3. coat both sides of pizza breads with olive oil
4. spread on sauce and add meat on one and spinach on the other
5. then sprinkle cheese on top
6. let cool then serve

Who doesn’t love pizza?

Ingredients:

~ pasta and sauce
~ ground beef and pork made into meatballs

for sauce: puree spinach, leeks, tomatoes, onions, garlic, and seasonings to get flavorful sauce to pour over meatballs while they bake

 

Directions:

1. cook pasta and meatballs as you would
2. mix together with sauce and serve

an easy meal that’s always a family favorite

1. cook rice with butter and olive oil
2. add seasonings of choice
3. add in veggies, herbs, and beans
4. sprinkle cheese on top before serving…

Chicken Thighs with Broccoli and Potatoes

~ seasoning of choice
~ chicken thighs
~ potatoes

~ broccoli
~ leeks, garlic, onions

Directions:

1. marinate chicken for a few hours with honey, olive oil, water and seasonings of choice and herbs
2. bake chicken at 350 until fully cooked…keep cooked juices for gravy (miz with flour to get gravy)
3. season and bake potatoes and broccoli and serve with chciken

Not eaten yet…but all ready for hungry bellies

Directions:

1. scoop rice and bean mixture on chips
2. cover with cheese, and your choice of guacamole and sour cream
3. heat and serve

Pork and Turkey Meatloaf with Potatoes, Broccoli, Brussel Sprouts, and Carrots

Sauce Ingredients:

~ olive oil
~ water
~ cut peppers 
~ cut onions
~ cut leeks
~ cut garlic
~ seasoning of choice

Sauce Directions:

1. saute all ingredients
2. then puree until all smooth
3. Pour some over uncooked meat, then save the rest for dinner and reheats

Dinner Ingredients:

~ ground pork and turkey
~ cut leeks, carrots, onions, garlic, and peas
~ seasoning of choice, olive oil,
~ bread crumbs
~ one egg
~ brussel sprouts
~ carrots
~ broccoli
~ potatoes

Dinner Directions:

1. mix meats, with seasoning, eggs, veggies and breadcrumbs
2. make into three small loafs and pour a little sauce over
3. bake at 350 until full cooked
4. remove and serve, pour remaining sauce over eat slice

Hubby was worried it would taste awful…but he wound of having seconds and Dino ate everything on his plate…EXCEPT the brussel sprouts.

Spaghetti, Sauce, and Chicken Parm

Ingredients:

~ chicken thighs (cut into strips)
~ sauce (with purred veggies mixed in)
~ bread crumbs
~ pasta of choice
~ shredded cheese
~ seasoning with olive oil and water

 

Directions:

1. marinate chicken with seasoning of choice, water, and olive oil
2. cook pasta and set aside
3. place bread crumbs on plate and cover each strip of chicken in bread crumbs
4. baked chicken in oven at 350 degrees for ten minutes, then…
5. spread sauce over chicken and continue baking until cooked
6. Remove chicken and sprinkle cheese on top and let melt
7. serve and enjoy

One of Dino’s favorites…as longs as I don’t cook it too often.

Gnocchi with Veggies

Ingredients:

~ frozen gnocchi
~ butter
~ seasoning and olive oil

Directions:

1. saute seasoning, butter, olive oil and leeks
2. then add gnocchi and veggies
3. simmer on stove top until all cooked 

This was so tasty and light…a BIG hit

Even though I am cooking vegetarian for Dino, I have eaten leftover chicken dinners for lunch. Next week I’m going to make more baked chicken for hubby and I.

 

Rice, Chick Peas, and Veggies

COLLAGE beans, couscous, and veggies

Ingredients:

~ chick peas (already softened)
~ rice
~ onions
~ peppers
~ leeks
~ tomatoes
~ butter
~ olive oil
~ coconut oil

Directions:

1. saute garlic, onions, tomatoes, peppers, and leeks
2. cook rice, add butter and coconut oil to the water
3. once all items are sauteed, add chick peas and cooked
4. mix all ingredients together

Super tasty dinner and full of protein

Eggplant Parm with Spaghetti

Ingredients:

~ pre-baked, breaded eggplant
~ spaghetti
~ shredded cheese
~ sauce

Directions:

1. boil spaghetti and put on the side
2. pour sauce over breaded eggplants and reheat in the oven
3. once heated, remove from oven and sprinkle cheese on top

 

While Dino happily ate the spghetti he did not like the eggplant. He previously tried and hated zucchini as well. Guess watery veggies are not his thing.

LEFTOVER Pasta with Roasted Garlic and Broccoli

~ leftover spaghetti
~ garlic

~ broccoli
~ olive oil
~ sesame seed oil
~ butter

Directions:

1. cut garlic and saute in cast iron skillet with olive oil
2. add broccoli and butter and mix, lower heat and cover
3. heat spaghetti by pour boiling water on top through a colander
4. mix broccoli mixture with sesame seed oil and mix into spaghetti

Dino LOVED this dinner…I could eat pasta with veggies and olive oil and butter all the time.

Quinoa and Roasted Veggies

~ quinoa
~ leftover roasted veggies

~ sesame seed oil
~ butter
~ seasoning of choice

Directions:

1. cook quinoa according to directions, add butter and seasoning to water
2. mix in heated up veggies
3. toss in sesame seed oil and mix

Dino was home sick Monday and Tuesd`ay. He started feeling a bit better and needed protein. I made him eat quinoa and told him to eat it. He had some but begged for peanut butter and jelly. I caved, just this once.

~ mac and cheese

Directions:

1. make mac and cheese and add shredded cheese
2. saute garlic and spinach in olive oil
3. mix ingredients together and enjoy. 

This was my dinner and lunch for school…so good. Dino just wasn’t in the mood for it.

Dino has informed me that he NO LONGER wants any meat or chicken…sometimes eggs are okay…Some of these recipes still have meat as they are from before he told me and some are for hubby who will always be a meat guy. I still love a good chicken and bone broth, but also love meatless meals…as long as it’s real food, I’m eating it.

 

Sweet Potato and Ground Beef Casserole

COLLAGE ground beef casserole

Ingredients:

~ grass fed ground beef
~ shredded sweet potato
~ cut leeks
~ egg
~ onion and garlic
~ green beans
~ oil and butter
~ seasoning of choice

Directions:

1. coat skillet first
2. mix all ingredients and place in cast iron skillet
3. layer ground beef on top with seasoning,
4. bake in oven at 350 until cooked…
5. boil pasta and mix with a small amount of sauce to keep from sticking together when cooked.
6. Mix together and serve. 

DINO at it reluctantly…then he told me no more meat or chicken…

Oven Baked Fried Chicken with Wild Rice and Veggies

Ingredients:

~ chicken thighs
~ seasoning of choice
~ flour
~ wild rice
~ veggies of choice
~ olive oil
~ butter 

Directions:

1. marinate chicken thighs for a few hours
2. Then coat with flour and place on cast iron skillet
3. Bake at 350 until fully cooked

1. cook wild rice according to directions (I add extra butter and coconut oil with the seasoning)
2. add veggies of choice while it’s simmering
3. fluff with fork and let cool 

Dino was not home for this…though I am going to enjoy eating these leftovers.

Stir Fry Veggies with Pasta, Topped with Cheese

~ pasta (already cooked)
~ seasoning of choice
~ olive oil, sesame oil and butter

~ broccoli
~ carrots
~ tomatoes
~ leeks, onions, and garlic
~ shredded cheese

Directions:

1. add oils and butter to skillet with seasoning and cook veggies…letting them slowly cook
2. throw veggies over pasta

3. top with cheese

Dino was so HAPPY that it was a meat free dinner, he ate it so fast and wanted more.

Pea Soup with Carrots and Potatoes

Ingredients:

~ dry peas
~ water
~ carrots
~ potatoes
~ seasoning of choice
~ garlic, onion, and leeks

~ olive oil and butter

Directions:

1. add dry split green peas, garlic, onions, leeks, water, and seasoning to the slow cooker
2. set slow cooker to low for 6 hours
3. add carrots and potatoes after three hours

This will be used to add to couscous, rice, barley, and Bulgar mixes

Bulgar with Veggies, Salad, and Fruit

Ingredients:

~ bulgar
~ water
~ tomatoes and onions
~ olive oil and sesame oil
~ pears
~ onions, garlic, and leeks

Directions:

1. follow instructions for bulgar, but add olive oil and sesame oil with onions, leeks, and garlic
2. scoop some and add cooked spinach and tomatoes and fresh pairs

Pair with a salad and fresh fruit

Dino loved the food and ate most of his salad, some of the bulgar and veggies, and the fruit….a healthy and balanced meal.

Kidney Bean, Pepper, and Leek Quesadillas

Ingredients:

~ kidney beans (already slow cooked)
~ green pepper
~ tomatoes
~ onion and leeks
~ seasoning of choice
~ shredded cheese
~ olive and sesame oil
~ whole wheat tortillas

Directions:

1. saute peppers, leeks, and onion with olive and sesame oil with
2. once fully cooked, add beans and tomatoes
3. place cheese on half of tortilla, add mixture, top with more cheese, then fold over tortilla
4. repeat as many times as necessary
5. heat on both sides until crispy

Dino ate all three pieces on the way to karate!

Mommy and Dino’s Real Food Meals

Steak and Potatoes

COLLAGE baked potatoes

Ingredients:

~ grass fed beef
~ tons of seasoning
~ olive oil
~butter
~ potatoes

Directions:

1. marinate beef with water, olive oil, and seasonings
2  cook on grill…I prefer my meat RED in the middle, but hubby likes it a bit more cooked :(  
3. coat potatoes in olive oil and seasonings of choice
4. after potatoes are done, open and add butter to the inside
5. Serve

6. Dino does NOT like steak at all…he had some potato but chose to have leftover chicken instead. 

Meatballs and Sauce with Pasta

 COLLAGE pasta, meatballs, and sauce2

Ingredients:

~ grass fed ground beef
~ pasta sauce
~ egg
~ bread crumbs
~ seasonings of choice

~ pasta
~ veggies

Directions:

1. mix egg, bread crumbs seasonings (turmeric and italian seasoning), and ground beef together
2  shape into meatballs and bake at 350 degrees until mostly cooked
3. mix veggies of choice in sauce and slowly simmer the sauce
4. add meatballs to sauce to finish cooking and give sauce a tasty flavor
5. boil pasta and mix with a small amount of sauce to keep from sticking together when cooked.
6. Mix together and serve. 

6. DINO loved the meatballs and veggies…will make for great leftovers. 

 

 

Roasted Chicken and Veggies…YES I made it again…I LOVE it.

Ingredients:

~ whole chicken
~ potatoes and sweet potatoes
~ mushrooms
~ carrots
~ olive oil and seasoning...

Directions:

1. coat chicken with olive oil and seasoning
2. marinate veggies
3. Place everything in a cast iron skillet
4. bake at 350 until chicken is cooked through

5. Once again, cooking a big chicken before a storm is a great idea…lefotvers of chicken salad make a great lunch or dinner. I plan on making quesadillas with the leftover chicken as well. 

 

Curry Brown Rice with Veggies and Chicken Sausage

COLLAGE curry and turmeric rice, veggies, sausage

Ingredients:

~ veggies
~ brown rice
~ curry, turmeric, cilantro, and Italian seasoning blend 
~ chicken apple sausage (pre-cooked)
~ olive oil and butter

Directions:

~ follow directions to make couscous in cast iron pot add seasonings and…(add your own combo of butter and olive oil)
~ After rice has begun to simmer, add sliced sausage and frozen veggies of your choice and cover pot
~ occasionally mix to stir in all flavor
~ Once cooked, serve or reheat the next day

Can be added to broth or used to make quesadillas. Even served with sauce it’s delicious.

Baked Chicken and Fingerling Potatoes with Mushrooms

COLLAGE baked chicken thighs

Ingredients:

~ chicken legs
~ olive oil and seasoning of choice and turmeric
~ potatoes

Directions:

1. coat cast iron skillet with olive oil or butter
2  coat chicken, mushrooms, and potatoes with seasoning and olive oil (I am adding turmeric because of it’s immunity power…learn about it HERE)
3. place on cast iron skillet and layer with cheese
4. bake at 350 until chicken is cooked
5. Serve

6. Dino LOVED it… but forgot to get a pic of him eating. 

Brown Rice, Sausage, and Veggies

COLLAGE brown rice, sausage, veggies

Ingredients:

~ brown rice
~ apple chicken sausage
~ veggies of your choice (I chose spinach, peas, carrots, and corn)
~ seasonings of your choice (I chose turmeric, curry, and Italian blend)
~ olive oil, butter
~ cook brown rice according to directions, I added some extra butter

Directions:

1. cook brown rice according to directions, I added some extra butter
2. After boiling and now simmering, add in cut sausage and veggies
3. add some more water, cover and let simmer until rice is ready. 

4. Dino loves rice mixes and I love that I make them from scratch.

Directions:

1. coat chicken with olive oil and seasoning
2. marinate veggies
3. Place everything in a cast iron skillet 
4. bake at 350 until chicken is cooked through

5. WHOA!!! This rocked! Dino said he was eating like a pirate and even hubby loved it! Plus we had leftovers for chicken salad if we needed it with the upcoming storm. 

LEFTOVERS: Chicken Gravy casserole

COLLAGE leftover roasted chicken2

Ingredients:

~ leftover chicken and veggies
~ shredded cheese
~ homemade gravy

Directions:

1. place chicken and veggies on cast iron skillet
1. pour gravy on top
3. Sprinkle cheese on top of gravy
4. cover and bake at 350 for about twenty minutes
5. Serve! 

Dino couldn’t eat this fast enough! 

Baked Apples

Ingredients:

~ apples cut in half with slices
~ butter
~ cinnamon
~ flour
~ honey

 

Directions:

1. cut apples and make slice marks for the butter and honey to melt into
2. mix cinnamon with flour and put on side
3. melt butter and mix with honey
4. pour melted butter and honey mix on top of apples
5. sprinkle flour mixture on top
6. bake at 350 for about twenty minutes

LEFTOVERS: Chicken Casserole

COLLAGE leftover chicken made into casserle

Ingredients:

~ leftover chicken soup (drained)
~ olive oil
~ shredded cheddar cheese

Directions:

1. coat cast iron skillet with olive oil or butter
2 drain chicken soup 
3. place on cast iron skillet and layer with cheese
4. bake at 250 for twenty minutes until heated up and cheese is melted
5. serve.
6. LOOKS NASTY…BUT TASTES SO DARN GOOD! 

Boneless chicken thighs and veggies 

COLLAGE boneless chicken thighs

Ingredients:

~ boneless chicken thighs
~ olive oil
~ butter
~ coconut oil
~ brussel sprouts
~ broccoli
~ carrots
~ spinach
~ seasoning

Directions:

1. marinate chicken with seasoning of your choice and olive oil
2. coat pan with butter and coconut oil
3. place thighs on skillet along with frozen veggies
4. sprinkle more seasoning on top for added flavor
5. cover and bake at 350 for thirty or forty minutes
6. CAN BE CHOPPED UP TO MAKE QUESADILLAS, ENCHILAADAS, PIZZA TOPPINGS, OR CHICKEN SALAD. 

 

LEFTOVERS: Chicken quesadillas

COLLAGE leftover chicken made into quessaditllas with sauce2

Ingredients:

~ whole wheat wraps
~ sauce
~ shredded cheese 
~ leftover over chicken thighs and veggies
~ olive oil

Directions:

1. coat pan with olive oil
2. place whole wheat wrap down, layer with sauce then cheese
3. layer DICED chicken and veggies on top, then more sauce and cheese
4. cover with whole wheat wrap
5. bake at 250 degrees for twenty minutes or when crispy on top, carefully flip over

 

Couscous with chicken and veggies

COLLAGE couscous chicken sausage veggies

Ingredients:

~ pre-cooked spinach and feta chicken sausage
~ couscous
~ garlic and onion
~ frozen veggies
~ frozen spinach
~ olive oil
~ butter
~ seasoning

Directions:

1. coat cast iron pot with butter, coconut oil, seasonings, garlic and onions
2. Cook couscous according to directions
3. once you turn dial to simmer, throw in cut sausage and veggies
4. cover and simmer until all cooked.
5. CAN BE ADDED TO A SOUP
6. *****WHEN SERVING I ADDED SOME BONE BROTH AND TUMERIC POWERDER- GREAT FOR IMMUNITY SUPPORT AND PREBIOTICS*****

Butternut Squash Soup

Some recipes for butternut squash soup Deliciously Organic Gluten Free Goddess Southern Girl Eats Clean Wellness Mama though I changed it up a bit and added more coconut milk, ginger and turmeric and and took out the chicken broth. I love mixing it with leftovers and taking it to work…such a wonderful taste!

I found a better way to store all my recipes. It’s free and easy to use! I got the idea after reading http://food.thefuntimesguide.com/2009/10/recipe_organizer_software.php. It’s so easy to add my recipes, I can make folders and put copies of all the recipes in as many folders as I want. I can add the links and pictures from my blog posts. The best part I can easily read and share the recipes on my laptop at home or on my phone.
