Chicken Soup with Barley, Carrots, Potatoes, and Celery:

  • whole chicken
  • carrots, potatoes, sweet potatoes, celery, onions, garlic
  • olive oil
  • butter
  • water
  • seasoning

I threw the veggies in the bottom as always, added all my seasoning and water, then placed chicken on top! By placing chicken on top, it still cooks, but it easier to lift out of the crock pot and place in pan to begin pulling off the meat. I messed up and forgot to add barley to the crock pot, so I took some chicken broth, some bones, extra water and cooked the barley in the cast iron pot instead. After it was cooked I added it to the soup. I had extra barley leftover for salads, eggs, or other dishes.

started cooking rice in cast iron pot, then added tons of seasoning (Italian Herbs with a dash of curry). Once rice was boiling and I switched it to simmer, I threw in the precooked sausage and veggies. I covered and let simmer for about 30 minutes. It came out so darn tasty!

I made a HUGE vat of oatmeal and saved into smaller bags. All I have to do is add honey, butter, and cinnamon and enjoy. Perhaps he can really taste the oats instead of all the crap in the packet. A friend said she uses almond butter, roasted coconuts, and coconut oil. What do you add to your oatmeal.

I need to buy more quick oats from the bulk section at Whole Foods…not only can I make oatmeal, I use the oats to make overnight oats and other tasty treats.

No weekly meal plan this week…it;’s been a bit hecti after the holidays. When I go shopping Friday I’ll have a better idea of what I plan on making for the next two weeks.

Are you back on schedule after the holidays? What’s on your meal plan this week and next?

Even though I push fruits and vegetables, we still crave snacks. Thankfully there are many companies that produce NON-GMO snacks, since I am an awful baker. Some of my new favorites are…..

Liz Lovely’s cookies. Our favorite is Triple Chocolate Mint…but each is so delicious and GMO FREE.

Coco Roons. Our favorites are vanilla maple and lemon pie. They are GMO Free as well.

In an effort to save money and do a better, but EASY job of planning meals I’m just typing it out and putting it on the fridge. I WILL use, must use freezer meals in this meal plan. I don’t want them to sit and not get used…what was the point of gathering up the leftovers and freezing them. Hubby will know what’s on the menu and I won’t have to open up anything or search for the plan…it’s right there.

Here’s a pic of my two week meal plan (this was taken with my old phone…hence the terrible blur)

I am loving my new phone…the Samsung Galaxy S5.

It takes amazing pictures and is beyond easy to use! What a difference from this phone and the prepaid phones I used to have.

My favorite apps are…

Blue Mail…which coordinates with gmail and lets you add emails to task folder and reread at a later date!

Receipt Hog, I take pictures of receipts and get points. It’s that simple. It was recommended by a few reputable sites, I am at 600 ponits and can get a $5 Amazon card when I get to a 1000 points. It’s like getting money for free…we shall see if it really works. I will keep you updated.

All recipes and meals are made with organic, real food and/or NON-GMO products.

THANKSGIVING DINNER:

My mom served some organic and NON-GMO food items, not all, but she tried. It made a big difference to me that she tried. Dinner was great, while Dino didn’t eat a lot, he sure had LOTS of fun!

thanksgiving COLLAGE

TACOS:

CHICKEN TENDERS:

  • chicken tenders
  • seasoning and olive oil
  • bread crumbs or flour
  • marinate chicken, then coat in flour, and bake at 350 for thirty minutes in a cast iron skillet, turn over chicken half way through

MAC AND CHEESE WITH PEAS AND CARROTS: Since Annie’s Homegrown sold out to a General Mills I refuse to buy any of their products. General Mills is a company that is spends TONS of money on stopping GMO labeling. I prefer Whole Foods’ NON-GMO mac and cheese.

  • organic and NON-GMO mac and cheese
  • shredded cheese
  • milk and butter
  • peas and carrots
  • follow directions on box but add frozen peas and carrots with the pasta, add shredded cheese with the milk and butter and stir, sprinkle top with shredded cheese

LEFTOVER FROZEN MEAL—–CURRY RICE, CHICKEN SAUSAGE, AND VEGGIES

After dinner he asked for a pear…Dino LOVES pears…he knew he needed somethign super healthy before I would give him some cheese crackers as a snack.

CHICKEN SOUP with SWEET POTATOES, CELERY, ONIONS, CARROTS AND BARLEY:

  • whole chicken
  • water (amount depends on size of slow cooker)
  • chopped sweet potatoes, onions, carrots, celery, and barley
  • seasonings of your choice I used lots of garlic and herb mix from Whole Foods and a bit of their Latin seasoning mix
  • fill slow cooker with seasoning, veggies, water and barley, then place chicken on top with more seasoning, set for 8 hours on low.

Why do I place the chicken on top? I find it’s easier to get the chicken out, WITHOUT it falling apart. It adds a great flavor to the veggies and still makes an awesome broth.

FINALLY A NEW PHONE WITH AN AWESOME CAMERA!!!!!!!!

Next week I will be able you will see clear pictures of our meals…until then enjoy the clear details of the last pic.

You know how much I LOVE overnight oats. I sometimes make them in a thermos container, but I also make them in the peanut butter jar. When you have just a bit of peanut butter leftover…it’s the perfect amount for overnight oats. They oats are soft and chewy, and the entire snack is filling.
