Ingredients:

~ organic potatoes (cut into strips)
~ organic veggie mix of your choice
~ organic ground beef mixed with cheese and bacon
~ organic Italian seasoning
~ organic buns and ketchup

Directions:

1. mix veggies and potatoes (separately) in olive oil and seasoning
2. Place potatoes and veggies in separate pans and bake at 350 for 20 minutes, then switch to boil to properly crisp them dry the oil. Instead of them being soggy they will be tasty and crispy!
3. grill the burgers to your liking. I prefer mine medium, while Tony prefers medium well.

AJ ate the smaller version of the burger, normally he HATES burgers. I explained that these smaller burgers are just for kids. It’s like eating a meatball in a sandwich. He believed every word and ate it up! (UPDATE) we tried to feed him a small burger this past weekend, and it was no-go. Him eating one was just a fluke! 

The roasted veggies and fries were PERFECTION!

Real Food Meal – Raviolis and Green Beans in Butter Sauce

AJ still an omnivore. You may notice me referring to Dino as AJ from now on. As he is getting older, I think its time my blog grew with him. While the name of this blog won’t change, his will. So why AJ? Well I feel it’s a bit older than Dino, close to his real name while allowing for continued anonymity. 

Yes I am changing this format. Instead of posting all the meals I make in a week, I am going to feature one per post. It will save me time and allow me to share more with you. What do you think?  

Raviolis and Green Beans in Butter Sauce

Ingredients:

~ organic raviolis
~ organic green beans
~ organic butter
~ organic Italian seasoning

Directions:

 

1. boil raviolis in water with some butter and salt
2. bake seasoned green beans in oven until cooked but still a bit hard
3. mix together when all cooked, add butter and melted coconut oil
4. Serve and enjoy

AJ LOVED the meal especially when you can stuff your face with ravioli and make funny faces.

Tilapia Fillets, Stuffed Potatoes, and Butternut Squash

Ingredients:

~ tilapia fillets
~ potatoes
~ frozen butternut squash
~ butter
~ bacon
~ olive oil
~ seasonings of choice
~ leeks, onions, garlic

Directions Tilapia:

1. marinate in baggie with olive oil, water, and seasoning
2. Place on cast iron skillet when ready and sprinkle with some flour to give it that “fried” look
3. bake at 350 until fully cooked

 

Directions Potatoes:

1. place in clast iron skillet and cover, bake at 350 until full cooked
2. carefully cut in half when cooled, scoop out insides
3. mix scooped out potatoes with butter, milk, cheese, leeks, garlic, pre-cooked bacon, and seasoning of choice
4. scoop mixture back into each potato and cook for another five minutes

Directions Squash:

1. marinate with olive oil and coconut oil
2. cover with honey and cinnamon
3. bake at 350 until outsides are crispy….

There were no leftovers…

Tilapia Quesadilla For Dino

Ingredients:

~ tilapia fillets cooked and cut into small pieces
~ 2 whole wheat tortilla
~ cheese
~ seasoning

 

Directions Quesadilla:

1. latyer toritalla on cast iron skillet
2. layer cheese, seasoning, and shredded tilapia
3. add more cheese and cover with second tortilla
4. cook fully on both sides with crispy

Pea and Ham Soup

Ingredients:

~ ham bone with some meat still on it
~ dried peas
~ carrots
~ potatoes
~ leeks, onions, garlic,
~ couscous
~ seasoning of choice

Directions:

1. add water to bowl with seasoning of choice
2. place bone in pot
3. Then top with herbs and peas
4. Set at a boil, then simmer for one hour
5. Remove bone and cut off all meat and marrow and place back in soup
6. add couscous and veggies and simmer for another hour
7. Let cool and serve

Dino hasn’t had this as of yet…may have to freeze in smaller bags and serve last minute dinners…I LOVED IT THOUGH

We used rubber bands to decorate our eggs…Yes we used plant and herb based dyes for our eggs! They came out pretty darn cool! Then Dino drew on them.

The Easter bunny did give him some chocolate, but it was organic NON-GMO mint truffles..he LOVES anything with mint. He also got money, markers, glo sticks, a key chain and LOTS of Legos. Of course all his grandparents got him Easter gifts too, but we can’t list everything!

Meatballs and Spaghetti

Ingredients:

~ ground beef and turkey
~ seasoning of choice
~ garlic and onion
~ sauce
~ spaghetti
~ bread crumbs
~ egg
~ small bowl of olive oil

 

Directions meatloaf:

1. chop up garlic, onion, cauliflower
2. mix with egg, breadcrumbs, and ground beef and turkey
3. use olive oil to keep meat mixture from sticking to your hands
4. roll into balls and place on cast iron skillet
5. ****save some mixture and mold into small meatloaf****
6. bake at 350 for about 30-40 minutes or until cooked

 

Serve with spaghetti and sauce! 

Bake potatoes and broccoli with seasoning and serve with meatloaf

~ potatoes

Directions:

1. slice potatoes and bake in oven until fully cooked
2. pour raw scrambled eggs on top of baked potatoes (I mix my eggs with water and seasoning)
3. cover and bake until eggs are fully cooked
4. remove from oven and sprinkle shredded cheese on top

 

Makes for a great and filling snack

Meatball and Spinach Pizza

Ingredients:

~ ground pork and turkey
~ spinach
~ whole wheat pizza bread
~ sauce and shredded cheese
~ seasonings of choice
~ olive oil

Directions:

1. cook ground pork and turkey with seasonings
2. Set aside frozen fresh spinach
3. coat both sides of pizza breads with olive oil
4. spread on sauce and add meat on one and spinach on the other
5. then sprinkle cheese on top
6. let cool then serve

Meatballs and Pasta

Ingredients:

~ pasta and sauce
~ ground beef and pork made into meatballs

for sauce: puree spinach, leeks, tomatoes, onions, garlic, and seasonings to get flavorful sauce to pour over meatballs while they bake

 

Directions:

1. cook pasta and meatballs as you would
2. mix together with sauce and serve

an easy meal that’s always a family favorite

Rice and Beans with Veggies

~ rice and beans of your choice

Directions:

1. cook rice with butter and olive oil
2. add seasonings of choice
3. add in veggies, herbs, and beans
4. sprinkle cheese on top before serving…

Chicken Thighs with Broccoli and Potatoes

Ingredients:

~ seasoning of choice
~ chicken thighs
~ potatoes

~ broccoli
~ leeks, garlic, onions

Directions:

1. marinate chicken for a few hours with honey, olive oil, water and seasonings of choice and herbs
2. bake chicken at 350 until fully cooked…keep cooked juices for gravy (miz with flour to get gravy)
3. season and bake potatoes and broccoli and serve with chciken

Now Dino is an omnivore again…excuse me while I try to stop my head from spinning.

Sighs…I think I may have overdid it with chicken dinners. So I’m going to only plan one chicken dinner, one meat dinner, the rest will be leftovers and vegetarian meals. Depending on money, I may throw in a fish meal. 

 

Spaghetti with Roasted Garlic, Broccoli, and Cauliflower

Ingredients:

~ spaghetti
~ garlic
~ broccoli
~ cauliflower
~ olive oil
~ butter
~ seasoning of choice

 

Directions:

1. boil spaghetti
2. saute garlic, broccoli and cauliflower in olive oil and butter
3. mix together and serve

Super tasty dinner

Meatballs and Veggie Roll Lasagna

Ingredients:

~ lasagna noodles
~ shredded cheese
~ ricotta cheese
~ veggies of choice
~ eggs
~ ground beef and turkey
~ sauce
~ bread crumbs
~ olive oil and butter
~ seasonings of choice

Directions:

1. lightly boil lasagna noodles until they are softened
2. at the same time mix seasoning, ricotta, 1 egg and half of the cheese
3. take one noodle out at a time, layer ricotta mix on top, then veggies
4. fold over twice, and place in cast iron skillet with a small amount of water
5. spread sauce on top
6. bake at 350 for about 20-30 minutes
7. after removing from oven, sprinkle shredded cheese on top and let melt

1. pour some olive oil in a bowl to keep meet mixture from sticking to hands
2. mix ground beef and turkey with seasoning, egg, garlic, leeks, and breadcrumbs
2. roll meat mixture into balls and place on iron cast skillet
3. bake at 350 for about 30 minutes
4. let cool and eat 

AS SOON AS DINO SAW THE MEATBALLS HE WANTED THEM. I guess his vegetarian diet is over.  I will plan to have 1 meat, 1 chicken/fish dinner, the rest meatless and leftovers.

Sweet Potato, Leek, and Pinto Bean Quesadillas

Ingredients:

~ flour tortillas
~ shredded cheese
~ sweet potato
~ pinto beans (already softened)
~ seasonings
~ leeks
~ olive oil

1. cut sweet potato into small skinless cubes and place in oiled skillet
2. add seasoning and leeks
3. cover and bake at 350 for 20 min or until softened
4. uncover and add pinto beans and bake for another ten minutes
5. remove from oven, and mash potatoes until all flattened
6. in another skillet, place tortilla down
7. spread some cheese on one half, then the potato mixture, then more cheese
8. Fold over and repeat so you have two quesadillas cooking at the same time
9. Flip over when toasty on one side
10. Cut in half, eat, and enjoy

How can you beat cheesy, sweet, and savory?

Baked Fried Chicken, cheesy potatoes and cauliflower

Ingredients:

~ chicken tenders
~ flour
~ seasoning with olive oil
~ garlic
~ cauliflower
~ shredded cheese
~ potatoes

1. marinate chicken in bag with seasoning of choice, olive oil, and water
2. cut potatoes into cubes with cauliflower, and garlic, cover and mix with seasoning, olive oil, and water
3. Place potatoes in cast iron skillet
4. Cover potatoes and bake at 350 for about 30 minutes or until fully cooked
5. At the same time, get out flour and coat marinated chicken in flour and place on cast iron skillet
6. bake (uncovered) for about thirty minutes
7. remove potatoes, and sprinkle cheese on top
8. Then remove chicken and sprinkle cheese on top as well

A quick and easy meal…and yes Dino ate all his chicken.

Easy Stove Top Rice, Beans, and Veggies

Ingredients:

~ rice 2 cups
~ water 4 1/2 cups
~ diced onions and peppers
~ sliced garlic
~ cut leek
~ seasoning
~ olive oil
~ butter
~ cannellini beans canned or already cooked

 

1. put water, onions, garlic, peppers, leeks, butter, olive oil, and seasoning in pot and boil
2. once boiled, add rice and stir
3. then turn down heat to simmer
4. once there is little water left, add the beans
5. stir all together and serve. 

you can add feta or shredded cheese, extra veggies or meat to this meal…it’s beyond versatile. Dino has not eaten it yet. I made it and we will be having it for the next night.

Polenta, Eggs, and Cheese

Ingredients:

~ 1 cup polenta (dry) NOT the one already cooked
~ 2 1/2 cups water
~ seasoning
~ olive oil
~ butter
~ eggs
~ shredded cheese

1. in water add olive oil, butter, seasoning and boil
2. add polenta, boil, then let simmer
3. make two eggs, sunny side up
4. once polenta is cooked, scoop some into a bowl, top with egg and cheese and mix

 

it was a wonderful way to have eggs without the bread. Polenta is cheaper than bread and can be make into an porridge or then baked in the oven to make pizza crusts or bread…so versatile! 

I made more eggs on the baked polenta, but didn’t get a picture of that. It was so delicious though.

Even though I am cooking vegetarian for Dino, I have eaten leftover chicken dinners for lunch. Next week I’m going to make more baked chicken for hubby and I.

 

Couscous with Feta, Broccoli, and Parsnips

Ingredients:

~ couscous
~ sliced parsnips
~ fresh broccoli
~ crumbled feta
~ seasonings of choice
~ olive and coconut oil
~ butter

Directions:

1. In a pot, cook couscous according to directions (I added olive oil, curry and a latin seasoning to give it flavor and make it a yellow and flavorful)
2. In a plan, add butter and coconut oil and cook parsnips and broccoli with extra seasonings
3. when both are done, mix together in a large bowl and toss in feta

Dino LOVED this…of course it was tasty, so what’s not to love

Quick leftover slow cooked beans made into Cheese Melts

Ingredients:

~ bread 
~ leftover slow cooked beans
~ shredded cheese
~ olive oil and butter

Directions:

1. In a pan add olive oil and heat leftover bean mixture
2. sprinkle cheese on bread, layer heated bean mix on top, sprinkle more cheese on top, fold bread over twice
3.add butter to another pan and heat bread on both sides until cheese is melted

Baked Breaded Eggplant (for eggplant parm next week)

Ingredients:

~ whole wheat panko
~ eggplant
~ olive oil
~ eggs
~ seasoning

Directions:

1. create an egg mixture with eggs and seasonings of your choice 
2. slice eggplant and dip in egg mixture, then in panko
3. place on pan and bake in oven at 350 degrees for about 15 mins on each side

Veggie Lasagna

Ingredients:

~ 2 cups ricotta cheese
~ 1 cup grated mozzarella cheese, divided
~ 1 cup grated 3-cheese blend, divided
~ 1 egg, lightly beaten
~ 1 (16-ounce) bag frozen spinach, thawed, chopped and drained well
~ Salt and pepper to taste
~ 2 teaspoons dried oregano
~ 1 (25-ounce) jar pasta sauce
~ 9 no-boil uncooked lasagna noodles

My changes:

  • I used Whole Foods organic noodles were are thinner and was able to get three across and made four layers
  • I used an italian blend of seasonings and some turmeric

 

Directions:

1. Preheat oven to 350°F. create an egg mixture with eggs and seasonings of your choice
2. In a large bowl mix ricotta, 1/2 cup of the mozzarella, 1/2 cup of the 3-cheese blend, egg, spinach, salt, pepper and oregano.
3. In another bowl, combine the remaining 1/2 cup mozzarella and 1/2 cup 3-cheese blend.
4. Set both bowls aside.
5. In a 9×13-inch non-reactive baking pan, layer 1 cup of the sauce, then a layer of noodles and a layer of the ricotta-spinach mixture; repeat.
6. Top with sauce then sprinkle with remaining cheeses.
7. Pour 1 cup water around the edges of pan, then cover with parchment paper, then very tightly with foil.
8. Bake 1 1/4 hours, then set aside to let stand for 15 minutes before serving.

 

My changes: 

  • I forgot to add other veggies, so I sauteed them later on and just added them to each bowl and leftovers

Bowtie Pasta with Feta and Veggies

Ingredients:

~ bow tie pasta
~ feta cheese
~ mushrooms cut 
~ spinach thawed and cut
~ tomatoes sliced
~ olive and sesame oil
~ seasonings of choice

Directions:

1. Boil pasta according to directions
2. saute onions and garlic
3. Once onions and garlic are brown, add spinach, tomatoes, and mushrooms
4. Drain pasta, add to large bowl and pour in sesame seed oil
5. Mix in veggies then sprinkle in feta cheese
6. cover and mix well

Dino wanted more!

Dino has informed me that he NO LONGER wants any meat or chicken…sometimes eggs are okay…Some of these recipes still have meat as they are from before he told me and some are for hubby who will always be a meat guy. I still love a good chicken and bone broth, but also love meatless meals…as long as it’s real food, I’m eating it.

 

Sweet Potato and Ground Beef Casserole

Ingredients:

~ grass fed ground beef
~ shredded sweet potato
~ cut leeks
~ egg
~ onion and garlic
~ green beans
~ oil and butter
~ seasoning of choice

Directions:

1. coat skillet first
2. mix all ingredients and place in cast iron skillet
3. layer ground beef on top with seasoning,
4. bake in oven at 350 until cooked…
5. boil pasta and mix with a small amount of sauce to keep from sticking together when cooked.
6. Mix together and serve. 

DINO at it reluctantly…then he told me no more meat or chicken…

Oven Baked Fried Chicken with Wild Rice and Veggies

~ chicken thighs
~ seasoning of choice
~ flour
~ wild rice
~ veggies of choice
~ olive oil
~ butter 

Directions:

1. marinate chicken thighs for a few hours
2. Then coat with flour and place on cast iron skillet
3. Bake at 350 until fully cooked

1. cook wild rice according to directions (I add extra butter and coconut oil with the seasoning)
2. add veggies of choice while it’s simmering
3. fluff with fork and let cool 

Dino was not home for this…though I am going to enjoy eating these leftovers.

Stir Fry Veggies with Pasta, Topped with Cheese

~ pasta (already cooked)
~ seasoning of choice
~ olive oil, sesame oil and butter

~ broccoli
~ carrots
~ tomatoes
~ leeks, onions, and garlic
~ shredded cheese

Directions:

Dino was so HAPPY that it was a meat free dinner, he ate it so fast and wanted more.

Pea Soup with Carrots and Potatoes

Ingredients:

~ dry peas
~ water
~ carrots
~ potatoes
~ seasoning of choice
~ garlic, onion, and leeks

~ olive oil and butter

Directions:

1. add dry split green peas, garlic, onions, leeks, water, and seasoning to the slow cooker
2. set slow cooker to low for 6 hours
3. add carrots and potatoes after three hours

This will be used to add to couscous, rice, barley, and Bulgar mixes

Bulgar with Veggies, Salad, and Fruit

COLLAGE bulgar veggies and pears dinner

Ingredients:

~ bulgar
~ water
~ tomatoes and onions
~ olive oil and sesame oil
~ pears
~ onions, garlic, and leeks

Directions:

1. follow instructions for bulgar, but add olive oil and sesame oil with onions, leeks, and garlic
2. scoop some and add cooked spinach and tomatoes and fresh pairs

Pair with a salad and fresh fruit

Dino loved the food and ate most of his salad, some of the bulgar and veggies, and the fruit….a healthy and balanced meal.

Kidney Bean, Pepper, and Leek Quesadillas

COLLAGE bean quesadilla

Ingredients:

~ kidney beans (already slow cooked)
~ green pepper
~ tomatoes
~ onion and leeks
~ seasoning of choice
~ shredded cheese
~ olive and sesame oil
~ whole wheat tortillas

Directions:

1. saute peppers, leeks, and onion with olive and sesame oil with
2. once fully cooked, add beans and tomatoes
3. place cheese on half of tortilla, add mixture, top with more cheese, then fold over tortilla
4. repeat as many times as necessary
5. heat on both sides until crispy

Dino ate all three pieces on the way to karate!

Ingredients:

~ grass fed ground beef
~ organic can of stewed tomatoes
~ egg
~ bread crumbs
~ seasonings of choice

~ pasta
~ spinach

Meatball Directions:

1. mix egg, bread crumbs, seasonings (turmeric and italian seasoning), spinach, and ground beef together
2  shape into meatballs and bake at 350 degrees until mostly cooked
3. mix veggies of choice in sauce and slowly simmer the sauce
4. add meatballs to sauce to finish cooking and give sauce a tasty flavor
5. boil pasta and mix with a small amount of sauce to keep from sticking together when cooked.
6. Mix together and serve. 

Sauce Directions:

1. in a cast iron pot heat up garlic and onions with olive oil and butter
2  slowly add stewed tomatoes with seasonings of choice
3. stir occasionally
4. once fully boiled, then simmered, let cool a bit
5. puree mixture until as creamy as you prefer
6. serve over pasta and meaballs

DINO loved the meatballs and veggies…will make for great leftovers.

LEFTOVER CHICKEN Made into Chicken, Pepper, Onion Melts

COLLAGE LEFTOVER chicken with peppers and onions

Ingredients:

~ leftover chicken 
~ olive oil
~ diced peppers and onions
~ seasoning of choice
~ shredded cheese

Directions:

1. thoroughly cook onions and peppers in cast iorn skillet with some olive oil
2  once cooked add leftover chicken (that has been shredded or cut into smaller pieces)
3. lay one whole wheat tortilla down

4. sprinkle shredded cheese on one side
5. layer on chicken mixture
6. then cover with more shredded cheese and fold over 
7. turn tortilla when cheese has melted nad it is crisp on bottom side
8. REPEAT with following tortillas until all mixture is used up. 

IT WAS A BIG HIT WITH DINO

Ingredients:

~ ground beef (cooked in cast iron skilelt with onons nad garlic)
~ spinach defrosted
~ shredded cheese
~ homemade sauce
~ Whole Foods organic pizza dough

Directions:

1. cover dough in olive oil for better crisping
2  layer homemade sauce on top of pizza
3. layer with spinach, ground beef, or both
4. cover with shredded cheese

~ chicken thighs and drumsticks
~ seasoning of choice

Directions:

1. marinate chicken and leave in fridge
2  marinate veggies with seasoning, olive oil, and water
3. then bake both in separate cast iron skillets at 350 until fully cooked.
4. cover with shredded cheese

DINO LOVES EATING CHICKEN LIKE A PIRATE! He also got to use his chopsticks from a dinner out to eat his veggies. I added a side of quinoa with peppers and onions.

Potato and Leek Recipe

Great recipe for Oven Baked Leek Frittata from GiveRecipe.comI got the idea from my friend who invited us over for a playdate and dinner…I should have written down the instructions then. So going to get the correct ingredients, though she cooked hers on the stove top while the above recipe says to bake it. 

Ingredients:

~ leeks cut
~ potatoes grated

~ egg
~ flour
~ shredded cheese
~ seasoning of choice
~ olive oil

Directions:

1. grate two potatoes (should have made more)
2  mix all ingredients in bowl and turn on cast iron skillet to medium heat
3. pour mixture on skillet and cover
4. turn over when bottom is crisp (you can flip with large pan to make sure it’s an even flip) eggies with seasoning, olive oil, and water
3. when both sides are cooked, cute and serve
4. it was so darn tasty! 

Dino loved the smell and flavor…it wasn’t as good as my friends since I didn’t have all the ingredients I needed…but still rocked.

Chicken and Veggie Quesadilla ON THE ROAD

Ingredients:

~ diced peppers and onions
~whole wheat wraps
~ chicken sausage

~ spinach
~ mushrooms
~ shredded cheese
~ seasoning of choice
~ olive oil

Directions:

1. heat onion and peppers in cast iron skillet
2  add chicken and mushrooms (cut into small pieces first) and spinach
3. add spices, cover and saute
4. when fully cooked, layer cheese on one side of wrap, add heated chciken mixture, add more cheese, then fold in half (repeat for each wrap)
5. Flip when bottom side of wrap is crispy
6. Cut in half and serve

Dino LOVED these…they were a great dinner for on the road before karate.

Ingredients:

~ grass fed beef
~ tons of seasoning
~ olive oil
~butter
~ potatoes

Directions:

1. marinate beef with water, olive oil, and seasonings
2  cook on grill…I prefer my meat RED in the middle, but hubby likes it a bit more cooked :(  
3. coat potatoes in olive oil and seasonings of choice
4. after potatoes are done, open and add butter to the inside
5. Serve

6. Dino does NOT like steak at all…he had some potato but chose to have leftover chicken instead.

Roasted Chicken and Veggies…YES I made it again…I LOVE it.

~ mushrooms
~ carrots
~ olive oil and seasoning...

Directions:

1. coat chicken with olive oil and seasoning
2. marinate veggies
3. Place everything in a cast iron skillet
4. bake at 350 until chicken is cooked through

5. Once again, cooking a big chicken before a storm is a great idea…lefotvers of chicken salad make a great lunch or dinner. I plan on making quesadillas with the leftover chicken as well. 

 

Curry Brown Rice with Veggies and Chicken Sausage

COLLAGE curry and turmeric rice, veggies, sausage

Ingredients:

~ veggies
~ brown rice
~ curry, turmeric, cilantro, and Italian seasoning blend 
~ chicken apple sausage (pre-cooked)
~ olive oil and butter

Directions:

~ follow directions to make couscous in cast iron pot add seasonings and…(add your own combo of butter and olive oil)
~ After rice has begun to simmer, add sliced sausage and frozen veggies of your choice and cover pot
~ occasionally mix to stir in all flavor
~ Once cooked, serve or reheat the next day

Can be added to broth or used to make quesadillas. Even served with sauce it’s delicious.

Baked Chicken and Fingerling Potatoes with Mushrooms

COLLAGE baked chicken thighs

Ingredients:

~ chicken legs
~ olive oil and seasoning of choice and turmeric
~ potatoes

Directions:

1. coat cast iron skillet with olive oil or butter
2  coat chicken, mushrooms, and potatoes with seasoning and olive oil (I am adding turmeric because of it’s immunity power…learn about it HERE)
3. place on cast iron skillet and layer with cheese
4. bake at 350 until chicken is cooked
5. Serve

Brown Rice, Sausage, and Veggies

Ingredients:

~ brown rice
~ apple chicken sausage
~ veggies of your choice (I chose spinach, peas, carrots, and corn)
~ seasonings of your choice (I chose turmeric, curry, and Italian blend)
~ olive oil, butter
~ cook brown rice according to directions, I added some extra butter

Directions:

1. cook brown rice according to directions, I added some extra butter
2. After boiling and now simmering, add in cut sausage and veggies
3. add some more water, cover and let simmer until rice is ready. 

4. Dino loves rice mixes and I love that I make them from scratch.

5. WHOA!!! This rocked! Dino said he was eating like a pirate and even hubby loved it! Plus we had leftovers for chicken salad if we needed it with the upcoming storm. 

LEFTOVERS: Chicken Gravy casserole

Ingredients:

~ leftover chicken and veggies
~ shredded cheese
~ homemade gravy

Directions:

1. place chicken and veggies on cast iron skillet
1. pour gravy on top
3. Sprinkle cheese on top of gravy
4. cover and bake at 350 for about twenty minutes
5. Serve! 

Dino couldn’t eat this fast enough! 

Baked Apples

~ apples cut in half with slices
~ butter
~ cinnamon
~ flour
~ honey

 

Directions:

1. cut apples and make slice marks for the butter and honey to melt into
2. mix cinnamon with flour and put on side
3. melt butter and mix with honey
4. pour melted butter and honey mix on top of apples
5. sprinkle flour mixture on top
6. bake at 350 for about twenty minutes

eat and enjoy…we loved them.
