Shrimp and Veggies Over Rice

INGREDIENTS:

  • 1 bag of raw shrimp that is peeled
  • 1 bag frozen veggies of choice
  • butter
  • olive oil
  • seasonings of choice (I used parsley, garlic powder, Goya, and
  • 1 cup cooked rice (with Goya, parsley, Garlic powder, Italian seasoning, and turmeric to give it the yellow color)

DIRECTIONS:

  • peel shrimp and cook on stove top with butter, olive oil, and seasoning
  • When halfway cooked add veggies and stir
  • You could add pepper flakes for an extra zing, but AJ would have flipped out if I did that
  • After shrimp and veggies are cooked, serve over rice.

Spring Minestrone Soup

This recipe came from HOW SWEET IT IS . I set it up as a slow cooker freezer meal.

I took out the asparagus…because I just forgot it. I think I would cook the pasta separately, so I’m not having to be around for the last hour of cooking.

Ingredients:

  • 1 sweet onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 1 (28 ounce) can of diced tomatoes
  • 2 (15 ounce) cans of cannellini beans, drained and rinsed
  • 3 cups low-sodium vegetable stock
  • 3 cups water
  • 8 ounces of uncooked ditalini pasta
  • 1 cup of frozen sweet peas
  • 1 (6 ounce) bag of fresh spinach
  • 1/3 cup freshly grated romano cheese + more for topping
  • salt and pepper to taste

Directions

  • Prepare and put the following ingredients in a freezer bag: onions, garlic, carrots, tomatoes, and beans.
  • Mix peas and spinach in a separate freezer bag
  • When ready to cook, defrost, and add first bag of items to slow cooker, plus the water and vegetable stock. Cook on LOW for 6-8 hours.
  • For the last hour add pasta, then the last half hour add spinach and peas.
  • top off with romano and serve

Mini Mummy Pizza

Ingredients:
~ round bread or organic english muffins
~ pasta sauce
~ shredded cheese
~ provolone cut into thin slices

Directions:
~ bake english muffins or bread for ten minutes or until partially cooked (to prevent sogginess)
~ layer sauce on, then shredded cheese
~ bake for another ten to fifteen minutes

Take out of the oven
~ let cool for a few minutes
~ layer slices of provolone on top of mini pizzas
~ place two chocolate chips for eyes (I WAS going to use olives, but was all out).
~ Serve and enjoy

AJ only helped for a few pizzas then got “bored”. He wasn’t bored eating them though, he gobbled them up

Jack O’Llantern Quesadilla

Jack O’Lantern Quesadilla 

Ingredients:
~ refried pinto beans
~ shredded cheese
~ two large tortillas
~ butter

Directions:
~ mix refried beans and shredded cheese
~ butter cast iron skillet and lay one large tortilla down
~ layer bean and cheese mix on tortilla
~ cut out face on other tortilla and place on top **** you will have to move cheese from open spaces so it doesn’t burn when you flip the tortilla over****
~ flip over so it evenly cooks on both sides
~ Serve and enjoy

AJ LOVED helping me cut the eyes, nose and mouth. Then when he got to use the pizza cutter to slice up the Jack O’Lantern he was thrilled, even laughed like a mad scientist. He took great pleausre in eating the eyes first, then the mouth.

Mac and Cheese with Carrots

Mac and Cheese with Carrots

Ingredients:

~ organic mac and cheese
~ organic almond milk
~ organic carrots sliced
~ organic shredded cheese
~ organic butter

Directions for Carrots:
~ mix sliced carrots with butter, honey, and cinnamon
~ bake in covered cast iron skillet at 350 for twenty minutes
~ when fully cooked, add to mac and cheese

Directions for Mac and Cheese:
~ follow directions for mac and cheese
~ add shredded cheese to make it extra cheesy
~ when carrots are cooked, add them to mac and cheese and mix it up

As I have mentioned before we have a tiny kitchen in our apartment. We have little counter space and few cabinets. It gets tough prepping for dinners and baking. Then I found a space saving cutting board and colander on Amazon. You can find it HERE.

Mommy and Dino’s Real Food Meals

Even though I am cooking vegetarian for Dino, I have eaten leftover chicken dinners for lunch. Next week I’m going to make more baked chicken for hubby and I.

 

Rice, Chick Peas, and Veggies

COLLAGE beans, couscous, and veggies

Ingredients:

~ chick peas (already softened)
~ rice
~ onions
~ peppers
~ leeks
~ tomatoes
~ butter
~ olive oil
~ coconut oil

Directions:

1. saute garlic, onions, tomatoes, peppers, and leeks
2. cook rice, add butter and coconut oil to the water
3. once all items are sauteed, add chick peas and cooked
4. mix all ingredients together

Super tasty dinner and full of protein

Eggplant Parm with Spaghetti

Ingredients:

~ pre-baked, breaded eggplant
~ spaghetti
~ shredded cheese
~ sauce

Directions:

1. boil spaghetti and put on the side
2. pour sauce over breaded eggplants and reheat in the oven
3. once heated, remove from oven and sprinkle cheese on top

 

While Dino happily ate the spghetti he did not like the eggplant. He previously tried and hated zucchini as well. Guess watery veggies are not his thing.

LEFTOVER Pasta with Roasted Garlic and Broccoli

 

COLLAGE leftover spaghetti with broccoli

Ingredients:

~ leftover spaghetti
~ garlic

~ broccoli
~ olive oil
~ sesame seed oil
~ butter

Directions:

1. cut garlic and saute in cast iron skillet with olive oil
2. add broccoli and butter and mix, lower heat and cover
3. heat spaghetti by pour boiling water on top through a colander
4. mix broccoli mixture with sesame seed oil and mix into spaghetti

Dino LOVED this dinner…I could eat pasta with veggies and olive oil and butter all the time.

Quinoa and Roasted Veggies

Ingredients:

~ quinoa
~ leftover roasted veggies

~ sesame seed oil
~ butter
~ seasoning of choice

Directions:

1. cook quinoa according to directions, add butter and seasoning to water
2. mix in heated up veggies
3. toss in sesame seed oil and mix

Dino was home sick Monday and Tuesd`ay. He started feeling a bit better and needed protein. I made him eat quinoa and told him to eat it. He had some but begged for peanut butter and jelly. I caved, just this once.

This was my dinner and lunch for school…so good. Dino just wasn’t in the mood for it.
