I’ve been doing pretty good with my healthy eating. I lost another 2 pounds for a total of 11 POUNDS! I am so excited and feel great. I love the feeling of being in control of food and eating healthy food that doesn’t make me sick. Plus cutting out those modified foods, processed foods, and switching tomatoes for tomato sauce has made me feel better. 

So now onto our meals for last week. I was recently asked why I post meals that are a week behind. Though it would be easier to list our meal plan for the current week, I prefer to show you what our meal plan was last week, how the meals went, and if Dino approved. I also like to show our lunches and how we are sticking to a plan and eating healthy. 

Mar 9th-15th

Sun  Fish, Potatoes, and Green Beans

Thursday – Meatball Tacos, though this tasted good it didn’t agree with my tummy. I think the preservatives in the seasoning made me sick. I have to find a way to make taco mix from scratch.

Friday – pizza from our favorite restaurant

Saturday – Tony took us out to eat before he attended an umpire meeting. We had a nice dinner (gift card included) at Applebeas. 

Meatball Tacos

  • frozen meatballs

It was a quick and easy dinner, but I think I will still with my ground pork tacos made from scratch. I think the processed seasoning is what made me sick. 

Chicken Enchiladas

  • Enchilada kit
  • skinless and boneless chicken breast
  • spinach
  • string beans
  • cook sliced chicken, spinach, and string beans in cast iron skillet
  • mix chicken and veggies with seasoning
  • place chicken mixtures on tortillas and fold over in pan
  • Pour sauce over folded tortillas, bake according to directions on box and sprinkle with cheese

While this was also a pre-made seasoning, it did not affect my tummy in a negative way.

FRIDAY:
Mommychanged my lunch after I started to feel icky from the tacos. I decided to change from leftover tacos to just a bean and veggie quessadilla. Also have grapes, extra veggies with cheese, special k with milk, granola bar, and pretzels. 
Dino-Dino really wanted pizza again, I have to make mini pizzas the night before so he has them. xExtra Snacks fruit snack, pretzels, granola bar,

I also made a few freezer meals. It would be nice to make more freezer meals, but don’t have kitchen space and am afraid that it won’t taste as fresh. As always I make lots of breakfasts items and freeze them. This week I made banana and choc chip pancakes and egg muffins. Sorry no pic of the pancakes.

I also tried a chicken freezer meal. All in a cast iron skillet, I made Goya chicken, cheesy rice, broccoli, and beans. We saved the leftover chicken broth to use when I make another dinner. I have a steak broth leftover as well. I saved both the broth and chicken dinner in separate freezer bags. I pushed out the air and kept them flat to save room in the freezer.

Saturday – I was alone Saturday night…it was glorious. I had a beautiful lunch with my sister at the EverReady Diner. I got the BIG APPLE WRAP. I wish I had taken a pic, it was delicious and yummy. I ate half at the diner and half for dinner.

Mommy-(eating on my own. Daddy was camping and Dino was with my parents, LaLa and PopPop) I met my sister for lunch at the Eveready Diner and had an awesome meal. I had the “Big Apple Wrap.” It was a spinach wrap with apples, chicken breast, pecans, cranberries, blue cheese, and honey mustard vinaigrette. Can you say DELICIOUS? It was so big that I ate half there and saved the other half for dinner.

I have decided to rejoin weight watchers after about ten years, thanks to Carlin. She truly inspired me. I love myself and my body, but want to be healthy and in shape for Dino. I want to be in control of my food and stop feeling so sick every time I eat.

After only two weeks, I noticed a big change in my habits and the way I feel. All my digestive issues seem to have vanished. By changing what I eat I have changed my life. Plus I have lost 7.8 pounds so far!!!!! In addition to eating healthier and exercising I (and Dino) have…

  • stopped eating any canned or bottled sauce, opting for fresh tomatoes
  • stopped consuming anything with artificial sweeteners
  • stopped eating low fat, fat free, or sugar free products…only natural foods. If I must buy processed it’s pastas, soups, rice mixes, or pasta mixes.

Homemade Chinese Food – Saturday

Quick and Easy Quesadillas:

  • shredded cheese,
  • slow cooked marinated chicken
  • spinach

Place shredded cheese, shredded chicken, and spinach in wrap on the heated cast iron skillet. Fold wrap, heat on one side, flip, and heat on other side.

Mommy’s Tuna Plates:

  • one can of tuna
  • sliced apple
  • few slices of colby cheese
  • sliced cucumber
  • sliced grape tomatoes
  • spicy mustard
  • crackers

Place sliced apples on plate. Mix tuna with spicy mustard, tomatoes, and cucumbers and lay over apples. Add a few crackers and you’re good to go.

LUNCHES

I also started planning lunches and making them healthier as well. I went back to using EasyLunchBoxes since you can pack a great lunch with snacks all in one container. I know Dino loves his new lunch containers and enjoys helping me make lunch for the next day. He has actually asked for homemade lunches instead of ordering pizza or chicken tenders. That makes me smile…what a healthy boy.

In my lunch bag I can only have one container, so I pack a sliced, fresh fruit and a granola bar. I don’t eat all the items in my lunch container, I save some for morning or afternoon snacks depending on how early or late my lunch is.

Our Meal Plan Feb 23rd – March 1st

On Sunday, we had our favorite most versatile meal, Italian Bread Pizza…I swear I could eat this every night and it would be so different based on the toppings. 

Italian pizza CollageOn Monday night, we had Pasta shells with sauteed peas and tomatoes. Tomato sauce makes me sick, but fresh tomatoes seasoned and sauteed I can handle. Even better when mixed with frozen peas and a bit of diced onion…the taste is amazing. After the veggies were done and the pasta was cooked, I tossed the veggies over the pasta and mixed it all up. Then I sprinkled a bit of Parmesan and mozzarella cheese on top. I didn’t over do it on the cheese, just a bit..enough for some stickiness and flavor.

Dino ate every last bite of his dinner…it was easy and a BIG hit.

pasta pea CollageOn Tuesday we had homemade Chinese Food and it rocked. We recently bought Chinese food and it was too expensive and the amount in each container shrunk. Janine suggested making our own, so I did. Thanks for the idea babe. I used white rice, frozen Asian stir fry veggies, and chicken breasts which I marinated. I baked the chicken and veggies in our cast iron skillet. The meal was PERFECT and a new family favorite. We are going to make it again next week.

chinese food CollageOn Wednesday, I decided to just throw the leftover pasta, tomatoes and peas in the French Onion Soup with with Cannellini Beans.

On Thursday we had leftover pizza…mmmmm…still so good.

On Friday, I made another favorite, rice and beans.

rice bean CollageOn Saturday I experimented with potato gnochi and ground pork casserole. I LOVED it, Dino thought it was okay, Hubby ate bowl full, but didn’t ask for more. Well at least the leftovers are all mine.

I cooked the ground pork, broccoli, and cauliflower in the cast iron skillet. Then added it to the tray. Then I sprinkled the onion, mushroom seasoning on top of the pork mixture. Next I scooped the half cooked gnochi on top. After fully cooked in oven, sprinkle with cheese and let melt.

In retrospect, I could have mixed it all together in the cast iron skillet…oh well.

On Sunday, even though I was not feeling well, we had Ravioli, cannellini beans, and spinach. I love the taste of the sauteed beans and spinach…so yummy. It was even a BIG hit with Dino and Hubby ravioli collage On Monday we had the bean burritos and Hubby made cheeseburgers, with seasoned potatoes. Hubby does not like burritos…too bad…they were delicious.  bean burrito Collage

On Tuesday we had Rigatoni with broccoli and cauliflower. I made a sauce using olive oil, water, Parmesan cheese, almond milk, and LOTS of Goya seasoning. I baked the broccoli in an iron cast skillet, threw the past and veggies in a large container, poured the sauce over the pasta, covered it up and shook it it all up. It was a HUGE hit with Dino.

I changed it up a bit for Wednesday. I baked smoked sausage, sweet chicken and apple sausage, chopped onions, and sliced peppers. I poured in some water and sprinkled Goya seasoning, ginger and bit of curry. After the sausage was cooked, I cut it into small pieces and mixed it with the Knorr Herb and Butter Rice.

I decided to make the Meatballs Thursday night. Instead of noodles, I used rice, peas, and carrots. I sauteed the meatballs and veggies in the cast iron skillet, I added water and seasoning. The meatballs soaked up the seasoned water…they were so tasty.

Friday night we had the leftovers…I just love putting everything out, letting Dino choose what he wants, and helping him to heat it up. He felt pretty powerful choosing what would be in his plate. 

Saturday night we had chicken, mac and cheese, and carrots and zucchini. Dino ate all his carrots and actually had three bites of zucchini. As you have read before, Dino sure does love some veggies and will happily eat them. I am trying to make us an even healthier household, by increasing the veggies and fruits we eat and limiting the fats. Dino knows strong muscles and bones come with eating healthy foods, and while treats are fun, too much can cause bad things to happen to our body. I think having veggies and fruits around all the time and adding lots of spices to our meals has made the difference for Dino. I am also teaching him to really enjoy the taste of his food, eating slowly, and enjoy our conversations. 

Okay, back to the meal. I marinated the chicken in olive oil, water, and lots of seasoning: Goyacaribbean lime mix, ginger, and curry. Then as it cooked in the cast iron skillet I sprinkled some flower over the chicken…it gave it a nice texture while still keeping the flavor. the carrots and zucchini were cooked in a bit of olive oil and lots of seasonings…had a great flavor. The pasta was Knorr’s cheesy macaroni.  .

On Sunday, I spend the afternoon/evening with my friend. So it was Daddy and Dino on their own for dinner. After some bike riding, they got McDonald’s…a very daddy and son thing to do.

Monday was a crazy day for me…It was supposed to be Italian Bread Pizza, but instead it was freezer meals for us. Dino was so happy to be able to pick his meal…that I think I created a freezer meal monster.  We decided to have leftover ditalini with beans and french onion soup AND rice and beans… leftovers collage Tuesday we had Italian Bread Pizza…I was enjoying it so much that I forgot to take a pic of all the pizzas…I did get few final pieces. Dino ate an entire slice…he loves it so much. Hubby said that a co-worker thought it was from a fancy restaurant, but Hubby proudly told her that I made it.  pizza collage Wednesday I messed up a bit…I was supposed to make rigatoni, but used the Knorr Parmesan noodles instead…ooops. It all worked out though. In the cast iron skillet I sauteed chick peas, broccoli, cauliflower, Goya seasoning, water, and grated cheese…so tasty. Thursday, the night of the big snow storm we had fish, potatoes, string beans, and left over pasta with broccoli. I am so proud of my Dino for eating the everything on his plate (expect for the string beans), but he kept asking for more broccoli and cauliflower. Do you know how happy that makes me????

On Friday night, still can’t believe schools closed again today…looks like the marshmallow land out there. I made sausage and peppers on rolls…so darn tasty. Hubby wanted it on a different roll, oh well, I was trying to save money. He sprinkled some cheese on his. Since I wasn’t feeling well I wasn’t at the top of my game for this dinner…but it was still an awesome and cheap meal.

In the cast iron skillet, I threw in the sausage and peppers with lots of Goya and Caribbean lime seasoning, 1/4 cut water, and popped it in the oven, and baked for twenty minutes at 350. Then I cut the sausage into smaller chunks, stirred, and put the cover back on and let it cook for another twenty minutes, continued baking. Once fully cooked, I sprinkled Bisquick on and stirred, this kept the juices thick and made sure they stuck to the peppers and sausage.

Saturday to celebrate Valentine’s Day we decided to order Chinese food…it’s so expensive in our town and the portions and plates are getting smaller. Dino and I used to be able to share a meal and egg roll…but in the future I’m going to have to order his own meal. Or we could drive two towns over? Which is worse?

On Sunday, Hubby brought home the ingredients for pigs in blankets and Dino chomped on a peanut butter and jelly sandwich. It was an off day. Guess we’ll save the burgers for another night. Sorry no pic for that night.

Monday was a snow day…what a storm we had! We stuck to our original plan and had tuna melt with avocado, Dino and Hubby loved it…Hubby even had a second sandwich.

bbq pitas collageWe switched our meals, since we had another snow day on Wednesday. I decided it was a perfect day for beef stew. I still have two bowls left over, which means more freezer meals-freezer meals are a great way to save money, right?

beef stew collageThursday I made rice and beans. I used Knorr Fiesta Rice mix…it smelled so good and tasted even better. I sauteed the black beans and zucchini in the cast iron skillet, then mixed it with the rice, then topped it with taco shreds. Dino ate it all, zucchini included. With the leftovers, I made and froze three rice and bean burritos…will make a great meal one night.

Saturday Hubby decided to make the cheeseburgers instead of  me cooking the noodles and meatballs. I was nervous Dino would not eat it, since he HATES burgers and I was prepared to make french toast for him. Low and behold he ate half a cheeseburger!!! I was in shock…so much so that I forgot to take pics of the plate of yummy burgers.

meal plan Collage I LOVED Italian Bread pizza night…the Italian bread is bigger and softer, making for a great pizza. It was fun to be creative and mix up the toppings on each of the pizzas (2 large breads cut into smaller pieces). We used meatballs, spinach, ham, and olives. There was no need for sauce with just a bit of olive oil, though Hubby said the spinach was better than having sauce.

grilled cheese and soup CollageUsing shake and bake is always easy to use when making pork cutlets. I used the left over shake and bake to coat apples…boy they were great even Dino liked them. Along with the cutlets, we had string beans and potatoes.pork cutlet CollageKnorr’s Parmesan Bacon noodles, paired with broccoli and cauliflower with cheesy chicken cutlets made a great meal. Dino was crazy for the noodles.

We got sick, very sick…I can only think that the chicken was bad…even though it smelled fine. There was nothing else that we ate that made us sick. Dino recovered faster than me…thankfully.

cheesy chicken CollageOn Friday, I continued with our scheduled dinner, but didn’t have elbows like I thought we did. I used ditalinni instead. It came out great, and even though I was feeling icky, I had  bit. I sprinkled some cheese on Dino’s and he LOVED it. Definitely one of our favorites. ditalini

On Saturday, plans changed and we decided to eat out instead. We went to a local pizza place that offers TONS of great toppings for pizza. Dino wanted broccoli on his pizza-he makes me proud. I got the jazz pizza, which is spinach, broccoli, mozzarella, ricotta, and feta on a sauceless pizza. It was amazing. Dino even had a few bites of my pizza and liked it.

Our Meal Plan January 12th-18th

PicMonkey CollageChicken Parm with Noodles – I have been trying to cut down on pasta sauce. I find it acidic which upsets my stomach. Instead I’ve been relying on Pasta Roni and Knorr Pasta Sides to compliment dishes. As always Chicken parm is a bit hit in my house…I did keep a small can of sauce just for the chicken parm. Any other suggestions on what I can use instead of sauce?

chicken parm collagePasta with Red Clam Sauce – I unfortunately already had the red clam sauce, but there wasn’t a lot of it so it didn’t upset my stomach. Dino didn’t like it, but I had left over chicken nuggets so he was happy.

clam sauce collageWhite Rice, Black Beans, Diced Tomatoes, and Cheese – this has become a HUGE staple for me and Dino. We love it, so tasty and filling.

rice and bean CollageSoup with Chilli Fries – I was supposed to have this as a meal, but nixed that. Instead I had Wedding Style Soup (not homemade) and we had the Leftovers. Dino and I loved scooping up the Rice mixture with tortilla chips. He even had soup and the leftover noodles. He LOVES leftovers as much as his mommy.

leftovers collageRavioli, Spinach, Beans, This was a bit hit as well. The beans and spinach added a healthy twist and Dino was happy. I sauteed white beans, olive oil, water, goya seasoning, and spinach in a cast iron skillet. When the raviolis were done, I poured the mean sauce over the raviolis…IT CAME OUT GREAT…healthy and meatless.

raviolis collageTakeout – Since Dino was sleeping over my parents house so I made dinner for just the two of us. Mac and Cheese chicken parm tenders. There were only four tenders and I used a balsamic and olive oil mixture instead of sauce. It tasted great and our tummy’s felt better afterwards.

Two Great Meals: One Meatless, One Casserole

Sorry I have been absent…but I am back and hoping to keep on my schedule. There are so many blog hops I would like to join on Tuesdays, but it is easier for me to join the ones that post on Monday night.

meal lan collageI am trying to save money, eat healthier, and stay organized. I will post my meal plans on subsequent Tuesdays with all the meals I have cooked with that plan. Two of the meals will  be meatless…it just saves money. I could eat roast beef sandwiches and chicken parm every day…seriously I love meat and chicken, but it costs money.

MEATLESS: Pasta, Chick Peas and Veggies

  • 2 boxes PastaRoni (I use almond milk and dairy free butter for preparation)
  • frozen broccoli, cauliflower, and sliced carrots
  • can of chick peas
  • goya seasoning

DIRECTIONS:

  • bake veggies and chick peas first (brush with olive oil and season with goya mix)
  • make PastaRoni according to instructions
  • After pasta is done, mix veggie and chick peas into pasta, let set ten minutes and serve

meatless pastaDino loved it…when he first saw it he said it looked amazing. I then told him that the chick peas would make his muscles and brain grow faster…he of course ate it.

meatless pasta2CASSEROLE: Ground pork and Hashbrown

  • ground pork
  • goya sesasoning
  • frozen peas, carrots, and corn
  • can of cream of mushroom
  • hashbrowns

casserole1DIRECTIONS:

  • stir fry frozen hash browns on stove top (I prefer them a bit crunchier and they taste better this way)
  • coat pan with olive oil, crumble raw, ground pork in pan and sprinkle with seasoning
  • layer frozen veggies on top then scoop cream of mushroom on top of veggies
  • spread half cooked hash browns on top
  • bake at 350 for 40 minutes
  • turn oven off, sprinkle cheese on top and put pan back in oven to melt cheese

Another meal Dino loved…he devoured just about every bite. He even ate all the peas and most of the corn. I think this meal rocked, was easy, healthy, and very frugal.
