Slow Cooker Lasagna

Slow Cooker Lasagna

found the delicious recipe here

Ingredients
:
~ lasagna noodles (uncooked)
~ water
~ ricotta
~ shredded cheese (Save some for the top of the lasagna)
~ spinach
~ ground beef cooked with garlic and onion
~ sauce

Make sure to cook ground beef before hand..I sauteed garlic and onion, then added the ground beef

Directions:
~ FIRST mix ricotta, spinach, and shredded cheese
~ add a bit of sauce to the bottom of the slow cooker
~ add noodles (will have to break them to make it all fit and cover the entire span of the slow cooker)
~ add small scoops of the cheese mixture (don’t worry about spreading it evenly. It will spread out when you add more layers on top)
~ Spread scoops of the cooked ground beef
~ Scoop sauce on top
~ REPEAT with noodles, cheese mixture, ground beef, then sauce until you have the desired layers.
~ On top of final layer of noodles, layer sauce evenly and add remaining shredded cheese.
~  add some water to the bottom of the slow cooker to ensure it does not dry out.
~ Cover and put it on low for 3-4 hours. 

I learned that I can add more layers since the lasagna becomes heavy and weights itself down. When it’s all done it looks like only half a lasagna.

Honey Rosemary Chicken

Crock Pot Honey Rosemary Chicken

~ full chicken breasts
~ broccoli
~ 1/3 cup honey
~ 1/2 cup olive oil
~ 1/2 cup of Italian balsamic dressing
~ 4 tbs of rosemary
~ 1 tsp salt
~ 3 garlic cut finely
~ tin foil
~ 3/4 cup water

Directions:
~ roll about ten balls of aluminum foil into crock pot
~ mix honey, dressing, water, rosemary, salt, garlic, and olive oil.
~ place chicken on tin foil, then broccoli on top
~ pour mixture on top of chicken and broccoli
~ set on low for 7-8 hours

PERFECTLY PAIRED with overly buttered couscous.

AJ loved it, Hubby loved and went for seconds! This from a man who ‘hates” couscous! This might be one of my new favorites!

Ground Beef and Potatoes

Crock Pot Ground Beef and Potatoes

Ingredients:
~ ground beef
~ cut potatoes
~ LOTS of diced onions and garlic
~ spinach
~ almond milk
~ turmeric powder and seasoning of your choice
~ shredded cheese of your choice

Directions:
~ cut and prepare all the ingredients
~ mix all ingredients and place in slow cooker
~ set on low for 7-8 hours
~ sprinkle with shredded cheese when done cooking

AJ loved it as you can see from the pic above, in fact we both loved it!

Hubby ate it, but not sure he really loved it. Hubby will complain that my meals have no flavor, but he is so used to the artificial ingredients or fake flavors that mimic the real ones. With the garlic, onions, turmeric, Italian seasoning mix it had the perfect flavoring. You could taste the garlic and onions, taste the ground beef and potatoes, get a hint of the flavor and texture of the cheese. It’s important to taste real food and spices and the not the fake needed in processed foods.

Mini Mummy Pizza

Mini Mummy Pizza

Ingredients:
~ round bread or organic english muffins
~ pasta sauce
~ shredded cheese
~ provolone cut into thin slices

Directions:
~ bake english muffins or bread for ten minutes or until partially cooked (to prevent sogginess)
~ layer sauce on, then shredded cheese
~ bake for another ten to fifteen minutes

Take out of the oven
~ let cool for a few minutes
~ layer slices of provolone on top of mini pizzas
~ place two chocolate chips for eyes (I WAS going to use olives, but was all out).
~ Serve and enjoy

AJ only helped for a few pizzas then got “bored”. He wasn’t bored eating them though, he gobbled them up

Jack O’Llantern Quesadilla

Jack O’Lantern Quesadilla 

Ingredients:
~ refried pinto beans
~ shredded cheese
~ two large tortillas
~ butter

Directions:
~ mix refried beans and shredded cheese
~ butter cast iron skillet and lay one large tortilla down
~ layer bean and cheese mix on tortilla
~ cut out face on other tortilla and place on top **** you will have to move cheese from open spaces so it doesn’t burn when you flip the tortilla over****
~ flip over so it evenly cooks on both sides
~ Serve and enjoy

AJ LOVED helping me cut the eyes, nose and mouth. Then when he got to use the pizza cutter to slice up the Jack O’Lantern he was thrilled, even laughed like a mad scientist. He took great pleausre in eating the eyes first, then the mouth.

Ground Beef, Rice, and Veggies

In addition to AJ not eating hamburgers and cheeseburgers, he has now sworn off pasta. That’s right he doesn’t want any pasta. Why? He rather just have a bowl of meatballs or ground beef. Thankfully, he still loves rice…so I found a great way to incorporate rice with his ground beef only request.

Not eating pasta won’t be too tough, I rather eat rice or quinoa. This will be tough on hubby, since I refuse to make separate meals. I make dinner, you eat it or not dessert. Don’t worry, he’s still a big carb guy as he loves to eat sandwiches and fries.

The great thing about this dish is that it’s quick to make (as long as you make the rice the day before). The prep of chopping onions and garlic and sauteing them, then cooking the ground beef, finally adding the sauce and peas is not a long process. If your kid likes ground beef, this will be a big hit. Even better you can use the leftovers inside of dough or as a topping on pizza or nachos!

~ organic pasta sauce

Directions:
~ slice and dice onion and garlic and saute in olive oil in cast iron skillet
~ add ground beef, seasoning, and 1/4 cup water
~ once beef is starting to brown add sauce and peas (or veggies of your choice)
~ continue mixing until fully cooked
~ top wiht shredded cheese and tomatoes when serving

Mac and Cheese with Carrots

Mac and Cheese with Carrots

Ingredients:

~ organic mac and cheese
~ organic almond milk
~ organic carrots sliced
~ organic shredded cheese
~ organic butter

Directions for Carrots:
~ mix sliced carrots with butter, honey, and cinnamon
~ bake in covered cast iron skillet at 350 for twenty minutes
~ when fully cooked, add to mac and cheese

Directions for Mac and Cheese:
~ follow directions for mac and cheese
~ add shredded cheese to make it extra cheesy
~ when carrots are cooked, add them to mac and cheese and mix it up

As I have mentioned before we have a tiny kitchen in our apartment. We have little counter space and few cabinets. It gets tough prepping for dinners and baking. Then I found a space saving cutting board and colander on Amazon. You can find it HERE.

Pasta with Meat Sauce

Ingredients:

~ organic pasta of choice
~ organic pasta sauce
~ organic frozen spinach
~ organic garlic
~ organic onions
~ organic ground beef

Directions:
~ defrost ground beef and spinach
~ dice onions and garlic, mix with olive oil and saute in cast iron skillet
~ add ground beef and spinach with 1/4 cup water and sauce, then simmer and cover
~ boil pasta and add some olive oil to keep pasta from sticking together

AJ approved it, but asked for more meat in his sauce. He doesn’t like hamburgers, but loves meatballs?!?!?!?!

I keep seeing videos on flattening out ground beef for 1. portion control, 2. easier storing in freezer, and 3. quicker defrosting. All three did work, but AJ wants MORE meat in his sauce next time.

Hearty Oatmeal

Hearty Oatmeal

A great way to start the morning is with a hearty and healthy oatmeal.

Ingredients:

~ organic oats
~ organic banana
~ organic cinnamon
~ organic butter
~ honey
~ organic chia seeds
~ organic coconut oil
~ organic almond milk (unsweetened original)

Oatmeal Directions:
~ follow directions to make oatmeal (1 cup water to 1/2 cup oats)
~ add butter and coconut oil after you add oats to boiling water
~ after bringing to a boil, low to a simmer and continue to stir
~ add a mashed banana, honey, and cinnamon
~ ***on the side, add chia seeds to some milk and put aside so chia seeds will set***
~ mix milk with oatmeal and serve

 

AJ loves a good oatmeal!!!! I always try to make a bit different, next time I’ll add apples with the bananas.

Herbed Chicken with Broccoli and Rice

Herbed Chicken with Broccoli and Rice

Nope, not pizza with eggplant as the base, but rather pizza with sauteed eggplant as a topping. It’s tasty and perfect.

Ingredients:

~ organic chicken thighs with skin and bones (I buy the chicken with bones since it is cheaper, I cut out the bones and save it for chicken broth)
~ organic southwest spice mix
~ organic sliced onions and garlic
~ organic broccoli
~ organic jasmine rice
~ organic dill, chives, parsley, and basil form my garden
~ organic olive oil
~ organic coconut oil
~ water

Chicken Directions:
~ chicken de-boned with rubbed herbs over and under the skin
~ place chicken in cast iron skillet with fresh garden herbs on top of chicken AND cover
~ bake at 350 degrees until fully cooked

Rice Directions:
~ follow directions for rice
~ add sliced onions, garlic, and herbs of choice to boiling water after adding rice

Broccoli Directions:
~ mix broccoli with herbs, spices, olive oil and coconut oil
~ bake at 350 degrees until cooked to preference. I love my broccoli fully cooked, while hubby prefers them only slightly cooked.
